Unlike commercially yeasted bread, sourdough relies on wild yeast—naturally occurring yeast found in the environment, from the flour to the air. This wild yeast, along with the lactic acid bacteria that thrive in the sourdough starter, create a unique fermentation process.

When you first mix together your flour and water, you’re creating the perfect environment for the yeast and bacteria to begin their work. Over time, they multiply, creating bubbles and fermentation that result in the rise and texture of the dough. The longer the fermentation, the more complex the flavors.
