Day 11 brings us a Sourdough Frittata, a great way to use up any veggies and stale sourdough while creating a savory, filling meal. A frittata is easy to make and can be customized with whatever vegetables you have on hand.

Sourdough Frittata with Veggies
Ingredients:
- 4 slices cubed leftover sourdough
- 6 large eggs
- 1 cup milk
- 1 cup chopped veggies (spinach, bell peppers, onions, mushrooms, etc.)
- 1 cup cheese (cheddar, feta, or goat cheese)
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
- Prepare the veggies: Heat olive oil in a skillet over medium heat and sauté the vegetables until softened (about 5-7 minutes).
- Make the frittata mix: In a bowl, whisk together eggs, milk, salt, and pepper. Add in the cubed sourdough and let it soak in the egg mixture for a few minutes.
- Cook the frittata: Pour the egg mixture over the sautéed veggies and cook on medium-low heat for 8-10 minutes. Sprinkle cheese on top and transfer the skillet to the oven under the broiler for 2-3 minutes to brown the top.
- Serve: Slice and serve hot, garnished with fresh herbs.
