Happy New Year! We’re excited to kick off 2025 with so much gratitude for the incredible support you’ve shown us over the past year. As a home-based micro-bakery in Rockwall, Texas, every day we get to do what we love — creating hand-crafted sourdough bread and baked goods that bring people together.
This year is a big one for us, and we wanted to take a moment to share some of our exciting plans for 2025, including how we’re working to bring even more delicious breads, treats, and experiences to you, our wonderful community.
Our Vision for 2025
As we move into 2025, we’re focused on growth, efficiency, and making sure we continue to deliver the best sourdough and bakery treats that you love. Here’s what’s on our radar:
1. Expanding Production with New Equipment
To meet the growing demand for our sourdough loaves and specialty breads, we’re planning to invest in heavy-duty mixers. Currently, we’re mixing by hand, which is a labor of love, but it limits how much we can bake each week. Our goal is to consistently offer 120 loaves each week (currently, we’re baking around 30). These mixers will help us scale our production while still maintaining the quality and care that goes into every loaf.
2. More Bread, More Variety
We’re not just about classic sourdough — our menu is packed with exciting options! From Garlic Parmesan and Basil Pesto Mozzarella to Pumpkin Spice (a fall favorite) and Honey Walnut, we’ve got something for everyone. And we’re working on expanding our seasonal offerings, so expect to see limited-edition breads like Gingerbread and Smoresduring the holidays, along with seasonal scones, cookies, and more. We want to make sure there’s always something new to try!
3. Building a Stronger Community
We’re also committed to becoming an even bigger part of the Rockwall community. We’ve loved being a part of the Rockwall Farmers Market, and we’re excited to continue serving you every Saturday, May through September, from 8 a.m. to 12 p.m. It’s been an incredible experience meeting so many of you in person and sharing the joy of fresh sourdough!
